Looking for a delightful and healthy breakfast treat that’s quick and easy to make? Our Pancake Banana Bites are the perfect solution! This recipe is a nutritious twist on classic pancakes. Perfect for kids and adults alike, these bite-sized morsels are ideal for a busy morning, a fun weekend brunch, or even a nutritious snack on the go.
Pancake Mix
1 medium ripe banana
¼ cup water
1 teaspoon vanilla extract (optional)
1/4 teaspoon cinnamon (optional)
Cooking oil or non-stick cooking spray
Toppings such as honey, maple syrup, fresh fruit, whipped cream (optional)
Prepare the Pancake Batter:
- In a mixing bowl, combine the AmBari Nutrition Pancake Mix with 1/4 cup of water. Mix well until you achieve a smooth batter.
- If desired, add cinnamon and vanilla extract to the batter for extra flavor.
Prepare the Bananas:
- Peel the banana and cut it into bite-sized pieces, about 1/2 inch thick.
Heat the Pan:
- Heat a non-stick skillet or frying pan over medium heat. Add a small amount of cooking oil or use a non-stick cooking spray to lightly grease the pan.
Coat the Banana Bites:
- Dip each banana piece into the pancake batter, ensuring it is fully coated. Let any excess batter drip off.
Cook the Banana Bites:
- Place the batter-coated banana pieces onto the hot skillet. Cook for about 1-2 minutes on each side, or until golden brown and cooked through. You may need to adjust the heat to prevent burning.
Serve:
- Once cooked, transfer the pancake-covered banana bites to a plate.
- Add toppings and drizzle with honey or maple syrup if desired.
Enjoy:
- Serve immediately while warm. These pancake-covered banana bites make a great breakfast treat or snack.
- Ensure the banana pieces are not too ripe, as overly ripe bananas can become mushy and difficult to handle.
- Experiment with different toppings such as a sprinkle of powdered sugar, a dollop of yogurt, or a dash of chocolate chips.
